Hello! I’m Spyros, a specialized agronomist with more than twenty years of deep knowledge of Greek honey.
I was born in Athens, and for as long as I can remember, I have been fascinated by nature. Thus, my more than 20-year professional relationship with beekeeping and Greek honey came as a natural consequence of an inner need for closer contact with the natural environment, the wild nature, and the unique products of the Greek land.
To pursue my dream, choosing the Agricultural University and specifically the Department of Biology and Biotechnology was the only path but also a blessing for me, as it was there that I had my first scientific encounter with the magical world of insects. I graduated from the Agricultural University of Athens in 1996 and continued my postgraduate studies at McGill University in Montreal, Canada, specializing in Entomology.
Upon returning to Greece, beekeeping was the field that piqued my interest. Since 2002, I have been working as a Honey Taster, Beekeeping Trainer/Consultant, and Head of Raw Material Purchasing at ATTIKI Beekeeping Company – A. Pittas AEBE. I oversee the sampling, organoleptic testing, evaluation, and purchase of honey from the company’s beekeeping suppliers across Greece.
At the same time, I serve as a beekeeping consultant/trainer, providing scientific guidance to professional and amateur beekeepers. I have conducted dozens of seminars on honey quality and proper beekeeping practices for groups of beekeepers, beekeeping associations and cooperatives, and private and public beekeeping schools (IGE Syggros YPAAT, ELGO-DIMITRA). I have participated in national and international beekeeping conferences as a speaker on beekeeping topics. I have been a member of the Board of Directors of the Hellenic Scientific Society of Apiculture and Sericulture.
In recent years, I decided to specialize in the organoleptic testing of honey, a field that has rapidly developed in Europe and America. An important chapter in my professional involvement with honey tasting is the successful completion of the specialized training Advanced Honey Sensory Course, from the National Council of Honey Sensory Experts of Italy.
As a Honey Expert, I organize honey tasting seminars and participate in related evaluation and organoleptic testing committees for honey, in domestic and international food competitions (Athens Fine Food Awards, among others).
All these years, two things have maintained my enthusiasm for the field to which I have dedicated myself: my love for the bee and its wondrous products, and the inner need to share with others the knowledge and experiences I have gained through this relationship.
